In this tiny enclave of 300 hectares, cocoa bushes are sacred, and the sole source of revenue. Chuao symbolises supreme quality and also supreme rarety : only a few tons of beans are gathered each year. They are first cut off the bushes with machetes, then left fermenting under banana-tree leaves and, finally, dried up in the sun on the church-square. That is the reason why the best chocolate manufacturers have to corne here to find the best cocoa beans.
At a time when the European Union authorises the addition of vegetable fat in the composition of chocolate, it is crucial that some manufacturers perpetuate the supreme quality of tradition and taste. There was of course, in Lyon, Maurice Bemachon , who unfortunately passed away in 1999 ; but a new group of people has since taken over, among them Robert Linxe from the Maison du Chocolat in Paris, and numerous other young chocolate artisans, everywhere in France.
